A 500ml container of broth. (chicken broth) Take a bunch of scallions as well. About three to four leeks. Half a kilogram of potatoes. You will also require liquid cream. Keep about 60ml of it. Lastly, you need salt and pepper.

Start off by washing the potatoes and then peeling the skin off them. After this, you need to dice the potatoes. Next, place the diced and sliced potatoes and leeks into your pressure cooker and cover them with the chicken broth. When the ringing starts, reduce the heat and leave it to cook for about 8-10 minutes (preferably 8 minutes). After this, let the steam escape and open the lid. You need to process the soup into a homogenous mixture using a mixer after this. Add cream when done and then heat the soup at a low temperature making sure that it does not boil. Season the soup. Decorate the soup with minced scallions and then serve the hot soup for a delicious meal.

Another thing is that, if you have an old one that you have been using for a very long time already, you cannot be very sure about its safety anymore especially if you do not perform regular checkup and maintenance. It is very important that you perform these things because failure to do so may lead to unwanted events. When you find any problem with your unit, you better bring it to a professional or change parts, if necessary. It is always better to be safe than sorry. Just hope that there are spare parts available for you to save your stuff.

The era of the old pressure cookers is already passé. With the demands of time and convenience that people have right now, it is just fitting for an improvement to be introduced. Although, this does not mean that they can no longer be used anymore, most people would still like to give them a go, but for those who have more demanding schedules, saying goodbye to the old one is the next step to make.

Modern-day pressure cooking can take the place of several appliances in today's kitchen. That saves money and space! But what is probably the nicest feature of a cooking under pressure is the time savings. By using a pressure cooker in the place of conventional cooking methods can reduce the cooking time of some very healthy and wholesome meals by up to 70%!

But how does cooking under pressure work? And how and why does pressure cook food in the first place?

When you use a pressure cooker, the first step is to place the food in the bottom of the pressure cooker bottom. The bottom is really nothing more than a heavy-duty pot. You can tell the difference between a regular sauce pot and a pressure cooker pot because the latter will have notches along the edge while a standard sauce pan or pot will have a smooth rim surface.

These notches match similar groves in the pressure lid. Typically, once you have the food in place, you are instructed by the recipe or the operating directions that come with the pressure cooking device to add a certain amount of liquid to the pot. It is this liquid that makes a pressure cooker work.

Once the food and the liquid are in the pressure cooker, the lid is fastened to the base, usually by mounting at a 30-50 degree angle away from the handle and then rotating the lid into a locked position. The lid has a gasket that forms an airtight seal between the top and the bottom of the cooker.

As you begin to heat the pressure pot, the liquid inside begins to get hot and approach a boil, steam is created. With the airtight seal in place, the steam has nowhere to escape to and it is this steam generation and retention that makes pressure cooking work.

The amount of pressure is measured in pounds of pressure per square inch, also known as PSI. Typical pressure cooker recipes are mostly cooked at a high degree of pressure. At this pressure, the temperature inside the cooker reaches around 250 degrees Fahrenheit which is almost 40 degrees hotter than the boiling point of foods cooked the traditional way.

But is cooking at that high temperature and with that much pressure safe? Yes! But cooking with pressure still has somewhat of an 'explosive' reputation that lingers like any other 'urban legend' that contains mayhem, violence and bloody gore.

These stories are just not true. Well, let me say that I cannot find any documented evidence of one of these devices exploding since the pre-1960's. And even the stories you find almost all have a central theme in common - user error or safety override!

These devices are well engineered and safe. Used in accordance with the manufacturer's directions and a hint of common sense, modern day pressure cookers work well, last a long time and do NOT blow up!

OK, so you have one of these amazing pots and now you are wondering about cooking beans in a pressure cooker. Actually this is one of the simplest things you can do. It is fast, easy and very tasty.

Once you have your beans fully cooked, they are ready to be used in a wide variety or recipes, even recipes calling for canned beans. They are soft and tasty and all you need to remember is to adjust the seasoning.

So here goes with the basic method:

I always start by soaking the beans in hot water for an hour. Place the beans in a suitable bowl, pour boiling water over them and soak for an hour.

After the soaking process, drain them and place them in your pot. Cover them with water, up to a few inches above them and close your pot. Now you can place it on the stove and cook it at the highest pressure for about thirty minutes and you're done. You are now ready to make any dish you desire with them.

You will be surprised at how soft and tasty they will be. Now you can use any of your favorite recipes to make tasty bean dishes. Our family particularly loves a nice thick and tasty soup. I add lots of stuff such as fried bacon, onions, potatoes, sweet potatoes and veggies to it.

All you have to do with it now is cook it for about another fifteen minutes to thirty minutes and your soup is ready. The time will depend on the amount of veggies you add and how finely you have chopped them.

I'm often asked how I find time to cook. My answer has two parts. First, healthy delicious food is essential for my well-being, so cooking usually comes first on my to-do list. Also, I find nothing more relaxing, creative or satisfying than trying a new dish or savoring an old favorite. Second, I use a pressure cooker. The usual response I get is, "The ones that explode?" Not exactly.

Pressure cookers have come a long way since the days of noisy valves and an occasional explosion. Thanks to new technology, today's pressure cookers automatically depressurize when overheated. A pressure cooker is essential for quick preparation of whole grains and beans. For example, brown rice takes one hour to cook conventionally. It also requires the use of a flame tamer or very low heat to avoid scorching. With a pressure cooker, it takes 35 minutes and won't scorch if an Ohsawa pot is used. Black beans cook in two hours conventionally, but take only 25 minutes in a pressure cooker. Long bean soaking times can also be avoided with a pressure cooker.

There are other advantages to pressure cooking. Foods retain their nutrient value because pressure cooking uses less water and the nearly airtight seal prevents nutrients from escaping. Pressure cooking tenderizes meat quickly so less expensive cuts can be used. Lower cooking times use less energy.

Select a stainless steel pressure cooker. Aluminum ones are available, but will leach harmful aluminum into the food. Look for a removable pressure regulator. A removable one is far easier to clean when it becomes clogged with food. The pressure cooker must generate at least 15 pounds of pressure to save time over conventional methods. A lid locking mechanism and pressure cooker and have a pressure release system will prevent explosions. The 5 liter size usually suits a family of 4. As when selecting any piece of cookware, pick it up by the handles and make sure it feels right in your hands.

Perfect brown rice begins with the right rice. I like Ohsawa Rose medium grain or Southern Brown long grain rice. The rice is cooked in this pot inside the pressure cooker. This makes scorching impossible. The recipe also calls for kombu, a seaweed that tenderizes the rice, making it easier to digest. Find it at your local natural foods store.

Perfect Pressure Cooked Brown Rice

1-1/2 cups brown rice

½ tsp salt

1 stick kombu

Water

Wash the rice by placing it in a bowl and filling the bowl with water. Stir the rice around with your hand. Chaff will float to the top. Carefully pour off the water and the chaff. Do this twice more or until the water runs clear.

Place the rice in a one-quart Ohsawa pot. Add the salt and the kombu. Fill the pot to the top with water and secure the lid. Fill the pressure cooker with one inch of water. Place the Ohsawa pot inside. Secure the lid of the pressure cooker and bring it to 15 pounds pressure according to its instructions. Cook for 35 minutes, and then remove the pressure cooker from the burner. Allow it to depressurize on its own. Serves 4 to 6.

When people hear about or see an all American pressure canner for the first time, they sometimes easily mistake it for the pressure cooker. They do look quite a bit alike which makes people wonder what the difference is if they are not familiar with kitchen appliances. Basically, they both operate on the same principle of using pressure to do their job. However, the canner simply heats the food to kill bacteria and prepare it for storage, where the cooker is used to completely cook food in a quick manner.

Visually, one of the biggest differences is the size of the all American pressure canner and the cooker. Each appliance has various sizes to suit the need of the consumer, but the cooker runs much smaller than the canner. Cookers are only meant to prepare food for a single meal and canners are meant to prepare much larger batches of food in jars.

Another difference is the materials that each appliance is made out of. Both are made from durable materials in order to withstand the pressure and heat that are used. Canners are made out of materials such as aluminum due to its ability to conduct heat better than other materials such as stainless steel. Cookers on the other hand are made out of materials such as stainless steel, aluminum or a combination of the two because they are under much more pressure than a canner.

A big advantage of buying the all American pressure canner over the cooker is the fact that the canner can actually operate as a cooker also, but not vice versa. However, due to its large size, it is not always convenient to use such a big appliance for such a small job. Typically you would prepare a small amount of food for a single meal and because of that, you may want to own both appliances for efficiency and convenience.

Both appliances operate with a pressure system, however each is slightly different. Cookers operate with a standard steady pressure of 15 psi. The low-pressure settings allow you to cook food, such as fish, which is normally not something that is cooked in a pressure cooker. A canner like the all American pressure canner though, has various pressure settings. Different sized jars will need a different pressure setting and different types of food with various acidity levels are canned with different pressures as well.

So although there are similarities between the all American pressure canner and the pressure cooker, they are two completely different appliances with two different purposes. They are made out of different materials, come in different sizes and use varying amounts of pressure. If you want to prepare large amounts of food and save it for a long period of time, canning is the best option for you. However, if your time is limited and want to be able to prepare meals very quickly, a pressure cooker is the better option.
